annie, I like to add some fresh grated nutmeg & some ground allspice (or Chineese five-spice powder) to mine also...
and/or cardamom...
I always grate some fresh nutmeg over the top...
Corn & nutmeg go soooo well together!
try adding some chopped onions, green, red & yellow peppers, diced jalapeno's & chilies for a South Western flair to this dish...
sweet/hot... yummmmm...
