Need to spend 2 or 3 days in STT and need a recommendation on the best place to anchour. Charlotte Amalie Harbor? Red Hook? etc.

I don't know about anchoring, but mooring at Christmas Cove is nice.

The Red Hook area is very crowded with private moorings and is subject to frequent ferry wakes. However if you are going to / from BVi, it is obviously convenient. Long Bay, Charlotte Amalie always has room to anchor and has access to dinghy dock, bus, etc but is right downtown. To still have access to services but quieter would be Elephant bay or Honeymoon bay, the two bays on the west side of Water Island, but they can also be crowded with local moorings.

Red hook anchorages are loaded with private moorings and the ferries turn it into a washing machine. Your best bet is to get a slip. Charlotte Amalie has many places to anchor and with a dinghy you can access most of the restaurants. Elephant Bay off Water Island is nice but it's full of private moorings.
