Who has the the best rum cake recipe ?? Either post it, or send me a private message. We are having a 'Shipmates Get Together' and need to impress them !!

All recipes are greatly appreciated and held in complete confidentiality !!

This one is a real crowd pleaser, we are always asked to make it for parties... Over and over again...

[color:"blue"]Contessa's Apricot Rum Cake[/color]

Ingredients:
1 pkg butter (or yellow) cake mix
4 lg eggs
3/4 c oil
3/4 c Apricot nectar (or Peach, or Mango)

Rum Glaze
1/2 c butter
3/4 c confectioners' sugar
1/2 c rum

Combine cake mix, eggs, oil and apricot nectar and beat well with mixer. Pour into lightly greased and floured tube pan and bake for 50 minutes at 325 F. Cool.

Meanwhile, combine butter, sugar and rum in saucepan and bring to a boil. Use fork to poke holes in cooled cake. Slowly pour glaze over top and sides.

Here's one for ya...


BACARDI RUM CAKE

1 c. chopped pecans or walnuts
1 18-1/2 oz. pkg. yellow cake mix
1 5-1/2 oz. pkg. jello instant vanilla pudding
4 eggs
1/2 c. cold water
1/2 c. Oil
1/2 c. Bacardi dark rum

Preheat over to 325 degrees. Grease and flour a 10" bundt pan. Sprinkle nuts over the bottom of the pan. Mix all cake ingredients together. Pour batter over nuts. Bake one hour. Cool. Invert onto serving platter.

GLAZE

1/4 lb. butter
1/4 c. water
1 c. sugar
1/2 c. Bacardi rum

Melt butter in sauce pan. Stir in water and sugar and boil for 5 minutes; stirring constantly. Remove from heat and stir in rum.

Prick top to make holes, drizzle and smooth glaze over top and sides allowing cake to absorb glaze. Repeat until glaze is used up.

Contessa's original recipe called for yellow cake mix, but I prefer the combination of the butter cake with the rum...
I have also made it with a devil's food cake mix and added some sweetened coconut flakes to the mix and glaze...
(used MaDouDou Coconut Rum for that one!)...

To dress it up, I dust the final cake with a little confectioners sugar...
