Chicken Tarragon 2 split, boned and skinned chicken breasts 1 stick butter 1 small, chopped onion or shallot 1 clove, chopped garlic 1 C. chicken broth 2 T. dried tarragon 1/4 C. sour cream salt and pepper Salt & pepper chicken. Saute chicken breasts in butter. When cooked remove from heat. Add onions, saute 'til glossy then add garlic. When cooked add chicken, chicken broth, tarragon cook 1/2 hour. Then and sour cream.Cook a few minutes to heat through. Serve with rice or buttered noodles. Serves 2. You can adjust the tarragon to taste. I like more tarragon but hubby less so when I make it for me alone I let the T. fly! Enjoy!

OOPS! check the bold instructions......I wasn't clear in the original recipe! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Blush.gif" alt="" /> I cook by the seat of my pants so I just take things for granted. Oh, well....hope it wasn't an inconvenience.

That sounds really good, Contessa! I think I would use fresh tarragon instead. I wonder if you could cut down some on the butter, and have it still be as good. That's a lot of butter!!

not to mention sour cream... but who doesn't love butter AND sour cream, mmm.

If you must.....use less butter or use Smart Balance w/butter and fat-free sour cream. But, everything in moderation. It's a great party dish!! YUMMY!

I absolutely agree with everything in moderation, and I use only real butter...I don't use Smart Balance or fat-free anything! But, IMHO, a stick of butter in two servings is NOT moderation <img src="http://www.traveltalkonline.com/forums/images/graemlins/handshake.gif" alt="" />

Thank you Contessa for a wonderful recipe! I am glad I saw the 1/2 instead of 1 stick of butter though! I cooked the chicken through in the first step, so I think I overcooked it when it still had to cook in the sauce for another 20 or 30 minutes...but my bad. It was still scrumptious and made the house smell wonderful. My husband (who doesn't like sour cream) wants it again! I served it with buttered dutch noodles and green peas...and I think I will serve it for company next time.
