Received a really RIPE mango from one of the neighbors on Friday and we made a mango salsa for dinner this evening, which was excellent! Got the basic recipe off Simply Recipes, and made a couple small changes. We had grilled chicken with the salsa, white and wild rice, and a green salad.

Mango Salsa

1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup mango)
1/2 medium red onion, finely chopped
1 Jalapeno chili (we put in two small red chilis we grew in our garden) (no seeds or ribs, unless you like it HOT!)
1 small cucumber, peeled and diced (about 1 cup)
3T fresh cilantro leaves, chopped
3T fresh lime juice
Salt and Pepper to taste
I added 1/2 green and 1/2 red diced bell peppers

Combine all ingredients in a bowl. Season with salt and pepper. If the salsa is too hot or too acidic, add some diced avocado.

Carol, that sounds good! I have a ripe mango in the fridge and I think I'll give that a try tomorrow.

I had sauteed tilapia with mango salsa for dinner one evening last week. My recipe is essentially the same, except I didn't use the cucumber, which I think would be a great addition. Unfortunately my jalepenos had no heat at all, so I was a little disappointed.

It was very good! The only trouble is that with just two of us, we didn't use it all, and the mango was so ripe, I suspect that it won't be any good this evening... The recipe did say it would be good with fish also, but I don't particularly like fish...

Classical Mango Salsa recipe. Love it. Just to mix it up sometime either substitute, nectarines, peaches or grilled pineapple. The basic recipe stays the same. I like to add a little granulated sugar to cut the acid

Gives a whole new flavor... good for all fish and chicken. I particularly like to put in on Grilled Shrimp and Twice cooked Tofu (as I do Mango Salsa)

No Annie, I just threw some things together. I rarely use recipes. I just wish I'd left the seeds in the jalapenos so it would have had some heat! What's the Daily Dish?

Ok Georgia...was not sure. The Daily Dish is email I get every day from ALLRECIPES.COM and there are five recipes and reviews in that email. There was a Grilled Tilapia with Mango Salsa recipe and that is why I asked you if that is where you got the recipe. They do have some great recipes. What I like about it is in addition to the reviews there is also the nutrition value and you can also re-size the recipe and that I like.

i have the same problem with jalapenos, which r really hit or miss as far as heat goes. sometimes they r fire, and then the occasional dud. i hate the duds.

I get a lot of my recipes from allrecipes.com and then usually make my own modifications...
They have so many great recipes there...
