I used fresh corn and made a bechmel sauce to make the creamed corn...
I also did mine in a water bath... so the bottom wouldn't burn...
Very Good...

INGREDIENTS
• 3 eggs
• 1/2 cup melted margarine
• 1/2 cup white sugar
• 1 (16 ounce) can whole kernel corn, drained
• 2 (15 ounce) cans cream-style corn
• 2 teaspoons cornstarch (I used arrowroot)
• 1/2 cup milk
• 1 teaspoon vanilla extract
DIRECTIONS
1. Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 baking dish; set aside.
2. Beat eggs until fluffy in a large bowl. Stirring constantly, pour in melted margarine. Stir in sugar, whole kernel corn, and cream-style corn until well combined. Dissolve the cornstarch in the milk; combine with the corn mixture. Stir in vanilla. Pour the mixture into the prepared baking dish.
3. Bake in the preheated oven until the pudding is puffed and golden, and a knife inserted into the center comes out clean; about 1 1/2 hours.

Brian, I just love corn pudding. Think the recipe would work cut in half? It is such a PITA cooking for one!

annie, I like to add some fresh grated nutmeg & some ground allspice (or Chineese five-spice powder) to mine also...
and/or cardamom...
I always grate some fresh nutmeg over the top...
Corn & nutmeg go soooo well together!

try adding some chopped onions, green, red & yellow peppers, diced jalapeno's & chilies for a South Western flair to this dish...
sweet/hot... yummmmm...

Have fun with it... corn pudding is a favorite of mine! I could eat it every day!

Brian, all those additions (though not all at once) sound great! I'll have to try them and see. Think I'll go make one now as I have all the ingredients and then I have a couple of nice jalapenos and some red and green peppers. I meant to buy some liquid egg substitute this morning when I was out shopping but forgot that. Since I am cutting the recipe in half I will need 1 1/2 eggs so I'm thinking I'll crack one whip it up and then use half of it. We'll see!

Brian, I took it out of the oven a little while ago and it is great! I've eaten so much of it now that I've ruined my supper! I did cut the recipe in half made it in an 8x8 pan and added 1/2 green pepper, 1/2 red pepper and a jalapeno. I was happy with the taste of it with those additions. One thing I would change that I did was that I used butter to grease the dish and next time I think I'll use Pam. All in all I was very pleased.

I have an asparagus soup on cooking now. Some days I just love to cook and will do it all day long. I think that tomorrow I am going to make the Roasted Red Pepper soup that was sent out in the Daily Dish this morning.

I just brought back 2 bushells from LI... Deb took a bushell to work and did them up on Thursday...
the rest we distributed to neighbors, and we had a dozen & 1/2 leftover...
I cooked them yesterday and will strip from the cobs today and make some Corn Pudding today...
I haven't made it in a while, but it is one of my favorite dishes, for sure! A Very New England dish!
We love NE cookong... my most used cookbook is the YANKEE Magazine Editor's Cookbook ...

Brian, you are so lucky with all the fresh vegetables up your way. I would love some nice fresh picked corn. Though we did have some Zellwood corn down here a couple of months ago. Zellwood had for many years and corn festival but they stopped several years ago. Have no idea why and naturally they stopped the year I had planned on going to it! Murphy's Law.
I used to subscribe to Yankee magazine. I have a few pamphlet recipe cookbooks from them. For sometime I used to use the Boston Globe Cookbook and I just took a look at it and I'm surpised...no recipe there for Corn Pudding.

Annie--I have been really surprised at the lack of fresh corn here.. One would think it would grow well here in Florida, but apparently not..

Carol, Zellwood is the only place I know of where it grows in Florida. But as I said to Brian that was a few months ago guess the season is over for Zellwood. I don't think ANYTHING grows well here in Florida with the exception of Plant City Strawberries...now those are great!

I have grown a few crops of corn in my garden. All are mini ears of corn, about 4 to 6 inches long, but regular width around. I don't know whether that's because I so recently started out with plain sand, or whether it just doesn't grow well here... Soldiering on, going to plant some more corn in a month or so.. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Smile.gif" alt="" />

When you are searching for "Corn Pudding" in New England recipe collections, also try Corn Scallop, Green Corn Scallop, and Escalloped Corn.

I've had many many versions over the years, all of which can be " built to suit".

The variety is silver queen, it just doesn't grow very long here, for some reason.

excellent Carol! I have tried here in NJ and it was a big flop... too much clay & shale...
I have grown it on LI, mostly sand & topsoil... it did really well there, but didn't look good on the property, as it's on the beach... so I stopped growning it about 20 years ago...
Looks a lot better with all lawn going to the beach...
and at $20 a Bu. (about 6 dozen ears)... corn is too cheap out there anyway to be bothered...

This year all the ears are short, about 6-8", due to all the rain we've had this spring & summer...
Best ones are the "bread & butter" corn... white & yellow mixed kernels...

Carol, maybe in the fall when the farm markets open again you can get it. I was searching the web and I saw that the Zellwood Corn Fesitival is starting up again next year. The name of the farm they get the corn from is Long & Scott Farm. The festival will feature Big Bertha that can cook 1650 ears of corn in 9 mins. in 350 gallons of boiling water. I'm gonna go to see that next year! Should be interesting.

The farm I get from grows their own... and it's all out back on a trailer bed... the guys just fill whatever size bag you want...

This one is so simple and so good...

Corn Bake:

2 cans creamed corn
1 box jiffy corn mix
8 oz sour cream
2 eggs, beaten
1 and 1/2 sticks melted butter

Mix all ingredients together and pour into a 9x13 glass dish. Bake 45 minutes at 350 or until lightly browned.

This is my "most asked for" recipe.
