I found this recipe somewhere and it peeked my interest. I did change it a bit but kept the integrity of the flavors. Enjoy!! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Cheers.gif" alt="" />
Ingredients: 1 lb ground chicken 1/2 cup hot wing sauce, divided 4 tbsp butter 1/2 cup unseasoned bread crumbs Cayenne pepper Salt 1 egg 1/2 cup blue cheese dressing Place ground chicken into a large mixing bowl. Add egg, bread crumbs, cayenne, salt and hot sauce. Mix with hands until well blended. Form mixture into 24 small balls. Melt butter in a skillet and add meatballs one by one. Give the pan a quick shake to avoid sticking, trying not to move them about too much or they may not hold their shape. Cook meatballs 4-5 minutes per side or cook until inside is no longer pink. Serve on platter with blue cheese dressing for dipping. Drizzle meatballs with leftover wing sauce. You may want to serve with celery and carrot sticks.

i have ground chicken and now i know what i want to do with it... question though, how much of the divided 1/2cup hot sauce is added to the meatball mix? tia.

1/4 cup for the mixture and 1/4 cup for serving. Buono Appetito!! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Cheers.gif" alt="" /> I've got lots of ground chicken recipes. I make meatloaf with mine all the time. I don't eat red meat so I can get pretty creative. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Wink.gif" alt="" /> I'll post a few recipes for them in the future.

i made them! and i hope u enjoy the photos because it took me forever to figure out how to attach... well, i made one change; instead of frying, i baked the meatballs for 30min @ 350. no celery or blue cheese dressing in the house, so my plating looks kind of drab... but it was delicious!! thanks again for sharing the great recipe, contessa. ![[Linked Image]](http://i396.photobucket.com/albums/pp42/plvovsky/IMG_1303.jpg)
