Simple, but excellent...

Perpare Heavy Duty foil by greasing with butter...
add in sliced 5-6 small sliced white (or red) eastern potatos (about 1/2 inch slices)... NOT Idaho's!
add in strips of sweet onions...
add in strips of red & green peppers...
sprinkle all liberally with a good Italian Seasoning mix (we really like a locally available Greek Seasoning mix)...
S&P to taste...

Roll foil into a long sealed log...
Place on the grill (or in the oven, 375-400F) for 30 mins. and turn...
cook for another 30 mins...

If you cook it in the oven, use the bottom rack position, so everything carmelizes...
We have a Weber Gas Grill, and I use the back & front burners on MEDIUM, with the center burner off...
It runs about 375-400F that way...
place the foil roll in the center, so not directly above the flame...
and you can cook your burgers, hot dogs, steaks, chicken, ribs over the direct flames on either side...

Brian, Paul cooked the potatoes on the grill like this. Yummy! Sometimes he would use carrots instead of the green peppers just for me because I just love carrots!

Annie, never thought about adding carrots...
we love carrots!
and now we can get carrot chips! sliced crinkle cut, about 1/4 inch thick!
easy when u don't want to do the work of peeling & slicing...

Brian, that is true about the different different cuts of carrots you can buy. I just think that when you peel and slice them they taste better! I slice them on the diagonal.

We have done this too and sometimes add brussel sprouts. This is also a great when camping.

Brian, I'm going to make this for my supper tonight. Of course I will be cooking in it the oven because to be honest with you I don't really know how to use the grill. That was always Paul's domain. I have a red and a green pepper in the fridge so I'll be making it with those. Now to see what I can find for dressing.

Carol, it is gas and it does not have a gas tank it has a direct connection to the gas line and there is no way I want to fool around with that!

Oh!! I wouldn't either. You can get a cheap gas grill for around $100 these days. We grill out probably 2 or 3 days a week. When we were in Virginia, Eric would get kinda snippy over having to stand out in the snow and grill, but now he has no excuses! (Except thunderstorms, and I just roll the grill over close to the awning! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />)

And Carol, the one I have now (Weber) is HUGE and I have a problem even lifting the cover on it! I might think about getting a small inexpensive one. I know about the thunderstorms! One time Paul had just put a couple of steaks on the grill and the skies opened, as only the Florida skies can. Of course he had to stay out there and he had a fun time peeling his clothes off and wringing the water out of them...not! Steaks came out great though.

I have made them and my recipe called for bits of crisp bacon and cheese also. Delicious!

I sometimes take the red potatoes and cut them into halves or quarters depending on size, then an hour before cooking I put them in a zip lock with a bit of oil and a package of Lipton Onion Soup mix shake it all around mixing it well. Then on the foil with whatever is available but always onion.

Brian, we do this often on week-ends at the cottage as it is so easy and delicious too! Some crisp bacon also adds a nice flavour. There are many different things you can add to spice it up and it is always very tasty. <img src="http://www.traveltalkonline.com/forums/images/graemlins/dine.gif" alt="" /> <img src="http://www.traveltalkonline.com/forums/images/graemlins/Cheers.gif" alt="" />

Big Jim, we make our potatoes just like that on the grill when we are having a crowd. I cut the red potatoes into wedges, throw them into a tin, toss with some oo, salt, pepper, garlic, and a bag of the onion soup mix. Cover with tin foil and just leave it on the grill till the potatos are tender. (turn occasionally). Good and very easy! Anon Ellie

I add broccoli or zucchini and yellow squash. Sometimes carrots. Butter, balsamic salad dressing, white wine...whatever I have on hand. The leftovers are great in the AM with eggs. Ami

Did just that last nite for Mom & Dad... added fresh onions & green peppers & chopped garlic... YUMMM!!!
The only caveat, there's just too much salt for my tastes...
My Dad, the 86 year old salt lover, thought it was perfect though!
