Pretty tasty over Honey Ham slices!
[color:"blue"]Pineapple-Green Onion Salsa[/color]
INGREDIENTS: 2 cups fresh ripe pineapple, trimmed, cored and chopped into 3/8-inch to 1/2-inch chunks 1/4 cup fresh lemon juice, with pulp 3-4 green onions, chopped with the green tops 1/2 red bell pepper, cored and chopped, 1/8-inch to 1/4-inch 1 teaspoon lemon zest, finely minced 3 dashes Louisiana Hot Sauce (or more to taste) 3/4 teaspoon kosher salt 2 tablespoons brown sugar 1/4 teaspoon dry mustard 1 pinch ground cloves
DIRECTIONS: Mix it all together

It would be good on fish, like swordfish, grouper, cod, etc... and on grilled chicken...

or chop the pineapple smaller, and just dip with tortilla chips... like any other salsa...

Brian, I've seen Steelhead in Costco here, but am not familiar with it. It has pink meat which made me think it was like salmon. Can you describe it for me?

Actually it is a Rainbow Trout that has migrated to the sea... similar to salmon in taste, but milder... delicious[color:"blue"]... " Steelhead trout can reach up to 55 pounds (25 kg) in weight and 45 inches (120 cm) in length, though average size is much smaller.
They are usually dark-olive in color, shading to silvery-white on the underside with a heavily speckled body and a pink to red stripe running along their sides.
They are a unique species; individuals develop differently depending on their environment. While all O. mykiss hatch in gravel-bottomed, fast-flowing, well-oxygenated rivers and streams, some stay in fresh water all their lives. These fish are called rainbow trout. The steelhead that migrate to the ocean develop a much more pointed head, become more silvery in color, and typically grow much larger than the rainbow trout that remain in fresh water.
Adults migrate from a marine environment into the freshwater streams and rivers of their birth in order to mate (called anadromy).
