I shared this with Peconic and then decided to share it with everyone. I got this recipe about 25 years ago. The girl that gave it to me translated it, the original was written longhand in italian. It was her grandmothers. I make it and always get raves about it. well here it is this is not low fat but is delicious. get a 10 inch springform pan and make a crust of whatever you like. i sometimes do oreo cookies mashed or graham crackers. don't prebake the crust this is the translation: in order and beat well 1 cup sugar 1 pound softened cream cheese 1 stick soft butter 1 16 ounce ricotta whole milk 1 16 ounce sour cream not light 4 eggs beaten 3 tablespoons fresh lemon juice 3 tablespoons pure vanilla extract 3 tablespoons flour
set the oven for 350 degrees. bake exactly one hour. turn oven off do not open the door leave the cake in there for another hour. then put in the refridgerator the longer this cakes sits in fridge the better it gets.
