[color:"blue"]Debbie’s Lobster Bisque[/color] This is all Deb's recipe... many trials and errors before absolute perfection!
2 tbsp. Butter 1 tsp. Minced Onion 2 tbsp. flour 1 tbsp. good tomato paste ½ tsp. dried thyme (key ingredient!) 2 cups chicken broth 1 ½ cups cooked cold water lobster meat (or more!) 1 cup whole milk 1 cup heavy cream salt & cayenne to taste
1) Melt butter in saucepan, saute onion until soft & golden. 2) Stir in flour & tomato paste & thyme. 3) Stir in broth. Cook, stiring until thickened. 4) Add lobster meat, cook on [color:"red"]low heat[/color] for 10 mins. 5) Stir in milk & cream, heat to serving temperature, but DO NOT BOIL! 6) Season with salt & cayenne before serving.
Serve with Oyster Crackers...
we have made a variation of this recipe with lump crabmeat & bay scallops (when we couldn't get fresh lobster)... It's also good with shrimp... and I'd bet it would be great with crawfish meat!
