Skipjacks is a restaurant in Simpson Bay, but they sell fresh fish in front of their restaurant for customers to buy.

There is a market on the Marigot waterfront and I believe the fish is available on Wed. & Sat. but you need to get there EARLY.
Simpson Bay has something of a fish market across from the police station near the drawbridge. Honestly, I have never seen much there and they don't seem to do a lot of business.
Not sure about getting your fish filleted. You could ask but a lot of local fish is served whole.
Skipjacks in Simpson Bay is another option.

We used to buy fish at the Marigot market, and there were always guys to scale and fillet the fish for a dollar or 2, depending upon how many fish we bought. Fun to watch them using a heineken cap nailed to a handle to do the scaling. In April, I noticed a fish market in one of the stalls, maybe across from Le Sucriere, that appeared to be open most days in the morning that had filleted fish for sale.

We bought a beautiful fresh Yellowtail from the little fish market in Marigot on our last visit. She cleaned it at no charge. It's across the street from Serafina's and seems to be open all day.

In Feb we bought filets, mahi mahi, and something else from Skipjacks, fixed them at the apt, and both were excellent - fresh and flavorful... smelled of the ocean, raw.. The Marigot market on fish day was actually kind of intimidating: local fishermen selling all these different colored and shaped fish that you don't recognize and don't know how to cook! We did see one dutch gentleman buy an entire mahi-mahi; the fisherman cleaned it and cut it into filets for him. Wished we had gotten that one! :>)

When we were on island end of march and first week of april, there was a guy selling fresh fish off of his truck right at the dead end of the runway around the bend. Have no idea what he had, or the pricing...but every time we saw him (usually around 4-6) cars were parked all over the place, and people were all around his truck buying. Both locals and tourists. Someone said that his fish stuff was literally right off the boats!!!!!! By the amount of cars and people we saw every time he must be doing something right. Coming from Simpson Bay, he was located at the bend on the way to the Causeway.

You can also buy fresh Caribbean lobster at the Marigot market.
