Thursday night is Ladies night at Sublime in Maho. 20% off cocktails and dinner for women only. David ordered a special of the night, lamb shank. I ordered the beef short ribs off regular menu. Both meats were tender and sauce was good. I don’t think mine was a short rib though? Last year Michael ordered same dish and it was several short side ribs with meat on them this was one long rib with meat all around it. Mike and Billy got the ribeye and enjoyed their meals also. David and I had the Porn Bubble cocktail, big drink and refreshing.
There was supposed to be a DJ last night at 7 PM which would’ve been a plus. That wasn’t the deciding factor in us going there so when there was no music it was no big deal. I’m mentioning it for those who may go when they’re supposed to be DJ you might want to call first to confirm.
15% was added to bill when we asked our server if she got that she said no, 10% went to the Government and they got 5%. Last year we asked the same question and was told the house got 10% and staff both front and back of house split the 5%. We left an additional tip for server without debating there is no government tax. It’s not a deal breaker for us but I thought worth mentioning.
Some of the explanations servers give on that 15% is over the top. I just go with the 15% and that's it for them unless I really feel the need to add more.
I had beef short ribs at Astra last year and it looked just like the one in your picture. I have had it several ways in the past at other restaurants. It seems to be becoming popular on the island.
If 15% service is added to the check on the Dutch side, that's the tip. Period. If the service was exceptional, we'll add more, but would never ask the server if they get that 15%.

It happened in all restaurants where we used a credit card whether we asked or not about service charge. And before someone asks it had nothing to do whether a tip could be added to cc or not because had we said yes they were adding it to cc.
We tipped in cash in every incident based on service so in all cases we tipped on top of 15%. If no service charge we tipped more.
