We will be chartering over Christmas Break. We plan to go to Palominos or Icacos on our fist night which just happens to be a Saturday night. Any thoughts on which would be better? What about crowds since it is a Saturday night?

The anchorages are usually full on the weekends.
But it sure beats being at the dock.

Icacos has no mooring balls, and whether or not it's comfortable depends on the wind and sea conditions. It was absolutely untenable when we stopped there on a Saturday afternoon (heavy swell), and mobbed with small pleasure craft and at least 3 party catamarans. Palomino looked desolate in comparison.

We stayed at Paloninos our first and last night. easy sail and enjoyed it.
