Went fishing with Taylor Made charter a few years back. Was for a half day and caught Mahi, Spanish Mackrel and other fish. He cleaned them for us and unlike other opperations lets you keep fish.

There are also a few land based guides that target tarpon in the various lagoons. Lots of BIG fish. Just google "tarpon fishing St. Maarten" and you'll get several.

You are correct. Tarpon are rarely eaten even from clean water. Poor tasting flesh. Loaded w/bones. Lots of fun to catch. Strong and very hardy.
