[color:"blue"]Curry Turkey[/color]

Ingredients
2 cups milk
2 chicken bouillon cubes
1 cup sauted onions
2 cups diced peeled apples
1/4 cup vegetable oil
2 tablespoons all-purpose flour
2 tablespoons Madras curry powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon lemon juice
4 cups diced cooked turkey
2 cups frozen LeSeur Peas
Hot cooked rice

Directions
1. In a small saucepan, heat the milk and bouillon, stirring until bouillon is dissolved. Set aside.
2. In a large saucepan, saute apples, peas and onion in oil until tender.
Stir in the flour, curry powder, salt and pepper until blended.
Gradually add milk mixture and lemon juice.
Bring to a boil; cook and stir for 2 minutes or until thickened. Add turkey and heat through.
Serve over rice.

I also like to add some crumbled bleu cheese and Cognac/and or/Sherry to the leftover gravy... and then heat up the leftover turkey in the gravy, etc...

Leftovers? We had 4 people total. I made 2 turkey breasts totaling 16 lbs., potato filling (about 10 lbs), 8 vegetables, homemade dinner rolls, and six pies. I finished the last slice of pie yesterday & that was the last of the leftovers.

Who has enough leftovers to be forced to come up with "ideas" for what to do with them? <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" /> <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />

wow, big eaters! i made your potato filling using 5lbs with plenty leftovers, for 7. i will also have to remember to post a photo of the potato pancakes made from the leftover potato filling; that was also a big hit.

I like to take the leftover mashed potatos, mix in chopped scallions & some of the leftover turnips...
and form them into burger sized patties...
dust them with flour and fry them in butter til just golden and carmelized...
YUMMMM!

Not forced... but like to do something other than sandwiches and just re-heated Thanksgiving Dinner...
traditionally we make Turkey Tetrazzini for our Day After Thanksgiving Sail... But didn't sail this year...
(it's gotten way too expensive to leave the sail boat in the water after Oct. 15th or so)...
and definately we had enough leftovers this year for sure!

Your leftover potato recipe is exactly what we did with the potato filling last year... SOOOO yummy!

I've always wondered why turkey & turkey breasts are only really available at the holidays- there are soooo many great recipes (like your curry above- I LOVE curry but never would have thought to do it with turkey!)that would be awesome with turkey but it's not easy to get year round. Weird.

(btw- CaribbeanScout, I didn't use 10 lbs of potatoes for my potato filling but the finished product was just over 9 lbs!) (and yes, we are big eaters!!)

Turkey unavalible?
Here in NY&NJ... we can get Turkey year round...
often on sale, year round, for less than $0.59/pound at Shop-Rite & Path-Mark...
during the holidays... 20-25 pound turkeys are available, if you use your shopping card... FOR FREE!!!
I just got one myself yesterday... almost 24 pounds... and FREE!
I am giving it to the group home my handicapped brother lives in... WAY Too big for us!
I just gave them 100 pounds of LI potatos... cost about $12 for 100 pounds from a local farmer on LI...

I cook turkey year round. i bought several and froze them. here i got butterball fresh turkeys for $.49 a pound and froze them the day after thanksgiving. Brian, I made turkey pad thai, and turkey tika misalla with leftovers and it was very good.

got it. 10lbs of potatoes did seem excessive for four... but you did say you love potatoes. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Laugh.gif" alt="" /> not much leftovers this year. i made sure everyone took a doggy bag, sweets to the office, with just enough leftovers to keep me satisfied. i meant to make turkey pot pie, but i just ate the last of the turkey.

I also used to get turkey year round at the local grocery stores in CT. I would buy much smaller ones than at the holidays, but so long as I had enough leftover to make some soup all was good!

We can GET turkey year 'round, but ALWAYS frozen, always small, and always pricey. I tried to buy a turkey breast a couple months ago & could only get a frozen one- not going to work when I wanted to make it that night- so I had to go to our local gourmet market (20 miles away)& buy one for somewhere north of $4.00 a pound. It was HUGE- over 9 lbs.- and delicious, but OMG what a pain!

Granted, I realize that we live in a culinary vacuum here, but it still seems odd that you can't get turkey the same way you can get chicken, like split breasts. Turkey is good on the grill, easy to roast, healthy, versatile... I think they need better marketing in the turkey industry!

We used to be able to get turkey cheap in Virginia. I remember a couple of times we got it for 29 cents a pound. We could also buy fresh turkey cuts, (but not whole birds) pretty much year round. Here in Florida, not so much, as we spent 59 cents for TG this year, but we bought three birds. We love turkey, especially white meat. I much prefer it to chicken.
