Friends coming to Jost from STT and customs in Great Harbor will be closed when they arrive at 5PM. And they probably won't make the 6PM West End ferry to Jost... Do they have any other option but to spend the night on STT?

How are they planning to arrive at 5pm. If they are coming on a ferry or water taxi, the captain will typically arrange to have immigration/customs stay later (for a fee).

Water taxi from STT - Will have them ask about that

In my mind, there's too many variables/risks that can change things. I would stay overnight in STT just to keep things less stressful.

There is a ferry out of Red Hook that works for them

Last year we arrived at Jost around 4:00 and the custom office was closed with a sign "closed, come back tomorrow" We stayed on the boat, had a nice dinner on the beach and went to office the day after. No problems.

FYI, legally you should have not gone to the beach. You fly your Q flag until customs opens. Probably not a big deal, but a customs officer in a bad mood could have made an issue.
