I saw glimpses of an oven baked mashed potato recipe on the Food Network the other night that I need to try to find online, as it looked great!

Also, Here is a thread from last year.

Also, you can do a SEARCH for Thanksgiving and put in a 2 year range in the date filter.

Baked mashed potato recipe here. This isn't the exact same one I saw the other day on TV, as the one the other day had panchetta in it, but to me, there's no reason you couldn't just put some panchetta in this one, or bacon. Yum!!!

Carol:
Thank you very much for the link. Never sure how to do it. Also, thanks for the Baked mashed potatoes recipe. Printed it and will try it. Also forwarded to my son in Rome, Italy. He always makes an American Thanksgiving dinner for his italian friends. He was just talking about it today. Thanks again. Thanks! Looks to be pretty much the same recipe, with the addition of the pancetta. TG on the beach again this year?

Yes, it is the same, didn't even notice that at first. Now you know how much pancetta to use.

Yes, off to the beach for TG - hope this nice weather continues!

Here is a great way to do Brussels Sprouts:

Pan Roasted Brussels Sprouts

½ lb. sliced pancetta, diced
8 Large shallots quartered
2 lbs Brussels sprouts, quartered
½ C white wine vinegar
Salt and pepper to taste

In a large pot, fry the pancetta till almost crisp. Stir in the shallots and cook until golden. Add the Brussels Sprouts and cook, stirring occasionally for 12 minutes. Add vinegar and cook till almost evaporated. Add salt and pepper to taste and serve.

This is the Turkey recipe I do. Makes WONDERFUL Gravy!

Orange Bourbon Turkey

2 C fresh orange juice
1 C water
½ C bourbon
1/3 C molasses
Several cooking onions, quartered
Several oranges, quartered
1 turkey
Salt and pepper
Poultry seasoning

Combine 1st 4 ingredients. Place turkey in a large cooing bag and pour in marinade. Place bagged turkey in a roaster and refrigerate overnight. Turn turkey in the marinade occasionally. Remove turkey from marinade, reserving marinade, and sprinkle inside and out with salt, pepper, and poultry seasoning. Stuff cavity with the orange and onions pieces. Roast at 325 until done. Pour reserved marinade into saucepan and bring to a boil. Skim off any foam. Cook till reduced to about 2 cups. Add ¼ cup bourbon, the pan juices and thicken with either flour or cornstarch.

This sounds delicious. I think I will try it and it is made with ingredients that I have around any how. The one question I have...having never looked for them...what is a large cooking bag and where do I find them?
Thanks

You should be able to find roasting bags where you would find ZIPLOCKS/GLAD Bags, etc. in the supermarket...

Honey Carrots

1 TBSP oil
2 pounds carrots, cut into one inch pieces
1 cup chicken broth
1/2 cup honey
2 TBSP red-wine vinegar
salt/pepper
2 TBSP butter

Heat oil in skillet over medium high heat. Add carrots until brown... add broth, honey, vinegar, salt and pepper. Bring to a boil... reduce to a simmer, cover, and cook 10 minutes.
Uncover and cook over medium high heat til carrots are tender and liquid is syrupy and reducing. Remove skillet from heat... add butter.

Yummmm! I love roasting vegetables. It brings out the natural sugars. I roast cut up squash much the same way but add a hit of balsamic vinegar which adds a nice sweetness to the flavor!

I do a mixture of butternut squash, sweet potatoes, parsnips or turnips tossed in olive oil with a bit of garlic. Spread it out on a cookie sheet and roast at 400 till done. 15 - 20 min depending on size. I stir 1/2 way through so all the sides get browned

Sounds like lovely sweetness! I love mixing those flavors. Yumma!!
When in Sicily I noticed that potatoes were par-boiled prior to roasting. I'm sure this made it easier to prepare but they were outstanding!! The other night I made these for a dinner party (got little Yukon's @ Trader Joe's) w/olive oil, fresh rosemary and shallots. OMG! For some reason they were just awesome. I'm going to continue par-boiling in the future!
