One of my recipes calls for cream sherry and I only have dry and cocktail. I saw something on the web that I could subsitute Marsala wine for that. Any thoughts on this? I do have the Marsala if that is acceptable. Thanks.

Annie, I work with someone that is a very good cook. She is asking, what are you making? Certain foods do not taste good with Marsela Wine because it is very sweet. Thanks!

So is Cream Sherry (very sweet)... I would think Marsalla or Port might be a good substitute, but it would definately change the final flavor... Not (necessarily) bad, but different...

Not that I drink it, but I thought it was a dessert sherry? So, yes it is sweet.
ex harvey's bristol cream?

Marge, YES, it's a dessert (fortified) wine... but also is very good in some recipes! It adds a sweet, smokey flavor... Often used with chicken or pork... esp. when combined with some bacon...

Right on Brian!
Thai-style Grilled Pork Chops
1 garlic clove 1/3 c fish sauce 2 T cream sherry 2 T rice vinegar 2 t brown sugar 2 t minced gingerot 2 1" pork chops
In small saucepan over medium heat bring all ingriedents with the exception of the chops to a boil. Remove from heat and allow to cool to room temperature. Place chops in a platic bag and pour in marinade and let marinate at room temperature for 15 mins.
Pour marinade in small saucepan and bring to a simmer over medium-low heat. Cook for 5 mins. Grill chops on hot grill for 5 to 6 minutes per side for medium. Serve with marinade drizzled over them.
Think I'll make the marinade with the Marsala and give it a taste before putting the chops in the marinate.

Annie, orange or pineapple juice is often substituted for a cream or dessert sherry. Apparently the taste is similar. Even an ice wine would be O.K. if you happen to have some of that. Enjoy your dinner!

Annie, ice wine is made from grapes that are left on the vine to freeze before they are harvested and made into wine. Results in a very sweet wine.

Elizabeth, I'd much rather have Cream Sherry or Marsalla... I can't see orange or pineapple juice ever tastinng anything like either Cream Sherry or Marsalla! There's no smoky taste at all to either of those two juices!
