Deb calls this soup "Free Soup" because on Weight Watchers it is almost no points...
(Except for the ground turkey, which we added to the recipe)...
Makes a great summer soup... we had it for dinnner last night...
There is no end to the possible combinations of veggies you can add or remove from this recipe!
I'm not a big fan of soup when it's hot and humid out, but this is great!


1/2 head cabbage, sliced into thin strips
2 large onions, sliced into chunks
5 yellow squash, sliced into 1/2 inch rounds
5 zucchini, sliced into 1/2 inch rounds
1 pound ground turkey, crumbled
1 can whole plum tomatos, drained, cut into chunks and de-seeded
1 tbsp. rubbed thyme
2 tbsp. chopped parsley
3-4 crushed garlic cloves
1 large can corn, drained (or 4 fresh corn ears, stripped)
S&P to taste
1 tsp. cayenne (optional)
2-3 large cans of low sodium/low fat chicken broth (just enough to cover)
Peas and/or string beans and/or brussels sprouts and/or green peppers (optional)
or any other veggie you might find tasty...


Place all ingredients in a pot and simmer until all veggies are tender... about an hour...
(I don't even bother browning the turkey, although you can if you wish)
Serve with croutons or a nice baguette...

I guess that depends on how much of each you eat!
(we have been getting a whole grain baguette at Stop & Shop lately that is excellent)...
and/or if you also have a glass or two of wine while eating!

I wonder how it compares to BULL HOOF SOUP. We're presently here in Virgin Gorda and went to a local party on Father's Day where they served this soup among other things.
