Graham Cracker Almond Candy By Carroll Pellegrinelli, About.com Guide
Warning: This Graham Cracker Almond Candy is addicting! A nice combo of sweet and salty!!
Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes
Ingredients: •1 package (1/3 box) graham crackers (approximately 12 double graham crackers) •1 cup butter •1/2 cup packed brown sugar •2-1/2 ounces (3/4 cup) sliced almonds
Preparation: Line jelly roll pan with foil. Place single layer of graham crackers on foil. Boil butter and sugar together for 2 minutes, stirring constantly. Pour over graham crackers. Sprinkle with almonds. Bake at 350 degrees for 10 minutes. Lift foil from pan, cool, and break into pieces. A nice quick dessert for cookouts!!

I make a similar candy using saltines. My grandkids demand it every Christmas.
Cracker Candy
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 sleeve saltine crackers 2 sticks unsalted butter 1 cup sugar 12 ounces chocolate chips 3/4 cup pecans -- chopped 1 pinch salt
Arrange saltines on a cookie sheet lined with foil, covering entire sheet. Melt sugar with butter; bring to a boil over medium heat, stirring constantly. Continue to boil for three minutes, stirring constantly. Pour over crackers and spread with an offset spatula to cover all. Bake at 350 for 12-15 minutes, until golden brown. Let stand for 2 minutes. Cover with chocolate chips; spreading melting chocolate to cover. Top with chopped nuts, pressing nuts into chocolate. Chill until firm, then break apart.
