went to sams this weekend and loaded up on economy size pkgs of meat, including some ground turkey. here are two recipes i made this weekend. the pics were taken prior to cooking, so use your imagination a little. both recipes were new for me. i'll definitely add them to my archives.

thai leek meatballs, serves 2

1/2lb ground turkey
1/4tsp salt
1/4tsp ground black pepper
2tsp soy sauce (i used low sodium)
2 cloves garlic, finely minced
1tbsp fresh lemongrass, finely minced
3/4 cup leeks, finely chopped

combine all ingredients. form the meatballs using approx. 1tbsp for each. and cook however you prefer. i baked at 350 for about 20-25min.
note: for the professional cooks looking at this, i admit that i didn't "finely mince". still came out mighty tasty.

chipotle burgers

i doubled the chipotles based on some of the reviews. next time i'd probably triple the amount, as i like it spicy. also, instead of making 1/4lb burgers, i'd make it a 1/2lb each. served on a roll with mozzarella, very good. glad i made surplus for the freezer.

I'm all over these!! As you may/or not know I don't eat red meat and try every recipe with ground turkey!! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Clapping.gif" alt="" /> I even make my Italian meatballs with ground turkey! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Thumbsup.gif" alt="" /> These sound full of flavor! yummmmmma!

you mean, you don't care for flintstone steak? <img src="http://www.traveltalkonline.com/forums/images/graemlins/Wink.gif" alt="" /> i made one more recipe, a thai variation of meatloaf. i'll post if you're interested. it's good, with cellophane noodles (glass noodles). it doesn't photograph well so i didn't take a picture... just kidding, i forgot to snap one. and i didn't post the recipe because i completely forgot i made it until now. shopping at sams means a lot of cooking and freezing. it's easy to lose track.

OK, glad I re-read your note before I made a stupid comment, as I was thinking "wow, those don't look very well cooked!" <img src="http://www.traveltalkonline.com/forums/images/graemlins/duh.gif" alt="" /> Would have liked to have seen the meatballs cooked. I don't like chipotle, so I think I personally would skip that.

thanks, peconic and carol. i've got nothing against emeril, except bam and his lame jokes (smellavision, come on how many times can you tell the same joke?).. i'm not too familiar with his cooking actually. but if you're talking about my presentation and then followed by emeril, hey i'll take it. just kidding, i know i'm not in the same league. i post pics to give people an idea, plus i personally like visuals. stimulates the appetite.

contessa- i'll post the meatloaf recipe tomorrow. just getting home from a late dinner and too tired at the moment. although here is a meatloaf recipe i've made many times from my all time favorite chef, barefoot contessa:

<img src="http://www.traveltalkonline.com/forums/images/graemlins/Rofl.gif" alt="" /> what a great morning laugh. it took me a second... because i actually bought 10lbs of ground turkey but didn't remember posting that. then i realized you meant ina's meatloaf recipe. you can halve that recipe to make one loaf, unless you have two loaf pans and/or want to feed an army. it is a bit much, but the flavor is there.

I started reading the recipe and saw it said 3 cups of onions and went 'say what?' Then I saw the 5 pounds of turkey. The recipe is supposed to feed 10 I guess, but still seems too much, even for that many! Speaking of which, I tried making two meatloves one time and freezing one before baking, and it came out extremely mushy. Thoughts?? Suggestions?? I don't make mine with turkey, but hamburger, and I do add a lot of the same things that Ina put in her recipe, and it does take quite a bit of time to put together. If I could make two and freeze one, it would be a great timesaver.
