Cleaning out the fridge yesterday and came up with this salad. It was surprizing good
Bake 10 strips bacon (save cooked fat) Grill 1 Large Chicken Breast Bake 4 quartered red potatoes Saute 1 can quatered artichoke hearts Make 1 cup of croutons using 1/4 of the bacon fat
in a bowl
10 calamata olives 2 plum tomatoes 1/2 peeled cucumber 1/2 red onion
Julienne chicken break up bacon into 1/3 strips
In a large platter with lots of surface area
1 head of cut Romaine top with all the above with the croutons ,chicken and bacon last
Bacon Vinaigrette
1/2 cup cider vinegar 2T honey Mustard emulsify with bacon drippings. If you need more fat, use olive oil. Add cracked black pepper and pour over salad. Enjoy... We sure did
