Thank you for your very tempting photos. Bacchus is truly one of the great lunch treats to be found on the island. Fortunately the location means that most tourists will never find it, because indeed it isn’t for everyone. I hope that the Risotto remains on the menu until I have the chance to try it. The menu does indicate that it is a Risotto de Coquillettes (small shell pasta) and not rice. For anyone who cares, the verb Risottare refers to the cooking method rather than just the actual ingredient of rice. Because pasta breaks down faster to a mushy consistency, a risotto of pasta is often considered a harder dish to successfully make than with Arborio rice. I hope yours was good, the photo certainly looks like it was.
