Not sure if this is a long shot but Mrs Nobby is a slave to the sourdough - the expensive artisan stuff that she toasts and has with peanut butter and Marmite for breakfast.
Are there any bakeries/stores which sell this in Philipsburg or are we more likely to find it in the French side ?

I've definitely seen packaged pre-sliced sourdough bread there, but I can't recall if I've seen fresh bakery sourdough which I suspect is what you are looking for. An example of the packaged stuff available on the island (from SXM Les Halles, a grocery delivery service on the island):

I'm not sure whether marmite is easy to find on the island either.

No idea about the Dutch side stores but if you make it to the French side, check out L'Express by Bacchus in Hope Estates (near Super U), very good boulangerie.

Sadly no Marmite on our visit.
We saw the above mentioned sourdough at Carrefour but the ingredients just read like heavily-processed ceiling tile so went for heavily-processed rye instead.
Sadly the long baguette we also bought was a pale imitation of a French stick. It was soft and mushy within a couple of hours.
