I haven't posted this in a year or two. Tis a little expensive to make but sooooo good... great for any barbecues, picnics, etc.

Carl's Favorite Summer Salad (cfss)

Ingredients: 1 head lettuce
1 head cauliflower
1 head broccoli
1 large red onion
6 oz Swiss cheese (grated)
6 oz cheddar cheese (grated)
1 lb bacon
Parmesan cheese (½ cup?)
Dressing: 1 pkg. Hidden Valley Ranch dressing (original recipe)
2 cups mayonnaise
2 tbsp sugar
1/4 cup milk

Shred and mix the garden vegetables into a LARGE container. Cook and crumble the bacon along with the cheeses over the top of the vegetables. Make the dressing and pour over the top (do not mix); sprinkle with Parmesan cheese. Cover with foil and refrigerate (12-24 hours?). This step is NOT necessary, except for "ahead" preparation.

Just before serving, mix all the ingredients with large spoon or by hand.

Interesting! I make a broccoli salad with similar ingredients, minus the lettuce, but never thought to shred the veggies!! I may try that this weekend myself! How about the addition of some red or yellow peppers???

Did you use a food processor and shredding disk to shred the broccoli and cauliflower??

We did not. Husband is a great chopper and he shredded the broccoli, cauliflower and lettuce by hand. It turned out perfectly. We were not sure about using the food processor and shredding blade as it makes things too small and mushy.

I'd never use a food processor shredding dicsk on broccoli or cauliflower...
It would just make a grainy/mushy mess of it...
would only work if you were using the stems alone, not the flowerettes...
and a knife & cutting board is faster & a lot easier to clean!

OK, I wasn't sure how small you're talking for the pieces of veggies. A square hand shredder would take forever. Guess we're talking chopped, not shredded.

Connie--we used a square hand shredder. It did take a while, which was kind of a PITA. The salad actually was very good, and our guests enjoyed it. I personally would say that when I make it again, I would probably add a bit less bacon, as it seemed a little heavy on bacon to me. I asked for honest assessments, and one of my guests said she thought it had a bit too much onion, but that may have been because I couldn't get the onion very small by shredding it. I might just chop the onion in future. Finally, even though it seems odd for such words to pass my mouth, I thought it might have had a tad too much cheese.. Seemed a tad greasy, but again, that may well have been a function of the bacon. Overall, really enjoyed it and would make it again!
