Saw this on Diners, Drive-ins & Dives the other night...
Sounded, and looked, really great!
(Recipe courtesy Myles and Dick Henry, owners Maine Diner, Wells, ME)...

BTW, they stressed the tomalley (the green stuff) is a very important part of the recipe...

[color:"blue"]GRANDMA'S LOBSTER PIE[/color]

Ingredients
5 (1-pound) lobsters
1/2 pound butter
2 tablespoons lemon juice
3 cups crushed snack crackers (I think they used Ritz on the show)
4 sprigs parsley
Lemon wedges
Directions
Bring a large pot of water to a boil over high heat.
Salt the water and add the lobsters.
When the water comes to a second boil, cook the lobsters for 12 to 15 minutes.
Remove the lobsters from the water and let cool. Crack the tails, knuckles and claws.
Pick out the meat from the shells over a bowl to hold the juices. Reserve the tomalley. Set aside.

Preheat the oven to 425 degrees F.

Melt the butter in a frying pan over medium heat and add the tomalley and lemon juice.
Remove from heat and stir in the crushed snack crackers. Add enough reserved lobster juice so the mixture is thick like turkey stuffing.
Divide lobster meat among 4 individual casserole dishes. Cover each dish with the cracker mixture, patting it on evenly.
Bake until the top begins to brown, about 10 minutes.
Remove the dishes from the oven and garnish each with a parsley sprig and a lemon wedge.

We just got 4 of them... $4.99/lb! Shoprite! total: 6 pounds! and all HARD SHELL! (two even had barnicles on them!)...
In the pot now! Gonna have this recipe for dinner tomorrow night!

Cheapest I've seen it recently it was $10.95 lb. Yes, That's the one!
and I got a lot of the key ingredient (Tomalley) from the lobsters! Probably three-four tbsp!
and one was a female, so I'll add the roe too! (as was suggested on the show)... <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />

annie, for the last few years ShopRite has had lobsters anywhere from $3.99-$5.99 per pound when on sale!
You have to weed out the soft shelled ones, but, it's worth the effort...
(it sometimes pisses off the guy behind the counter that I want to feel every lobster he wants to put in the bag! but the guys get lazy sometimes, and you have to check them!)

BTW... hard shell vs. soft shell? Hard shell have probably 30%-50% more meat vs. water inside the cavity...
and the ones with barnicles usually have the most meat!

Brian, my daughter gets the lobstah all the time at Shop Rite...wish there were some around here! Several years ago Albertson's used to have them on sale every so often for $6.99 lb and I would buy them then. I won't pay $10.99 or up for them though. Guess I'll have to take another trip up North to get my lobstah fix! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />

We just finished eating and...
It was EXCELLENT and so simple to make!
One thing, next time I'll cut the Ritz Crackers down to about 1 1/2 cups... and the butter to one stick...
made way too much with 3 cups!!!
BUT... Talk about comfort food! YUMMMMM!
(it IS VERY rich!)

I did not boil the lobsters either, I steamed them for about 20 minutes...

I make something similar with shrimp. I use one stack of Ritz crackers, crushed, one stick of butter, melted and a little worchestershire sauce. Mix it together and mix in raw shrimp to coat it. Spray a casserole dish with Pam and evenly place in the shrimp and cover with the rest of the cracker mix. Bake for 25-30 minutes in a 350 0ven. In the olden days we used the huge shrimp and stuffed it with the mixture, but in recent years I use regular cocktail size shrimp. It is very rich. I always use the same amount of crackers/butter and add however many shrimp I need. I usually have shrimp (raw and cooked) in the freezer, so it is an easy meal to make because I have everything on hand. To make it even worse for your arteries, you can serve it with melted butter!
