Here's a good recipe... I have made them like this before, but just made up the recipe as I went along... http://www.bigoven.com/168323-Crockpot-Beef-Short-Ribs-recipe.html

i've tried different recipes, but this is one of my favorites and is well received when i make it.
korean-style ribs, serves 4
3lbs pork or beef ribs, trimmed of excess fat 1/2 cup low sodium soy sauce 1 cup freshly squeezed oj 2 tbsp rice vinegar 1 tbsp finely minced/grated peeled ginger 3 cloves garlic, minced 2 tbsp toasted sesame oil 2 tbsp honey
brown ribs on med-high heat for approx 15mins until browned on all sides. transfer to slow cooker.
in a bowl combine soy sauce, oj, vinegar, ginger, garlic, sesame oil, and honey and mix well. pour the sauce over the ribs. cover and cook on low heat for 6-8hrs until the meat is very tender.
garnish with sesame seeds and scallions, if desired.
right now i have bourbon-molasses ribs going in the oven, which i intended for the slowcooker but forgot to get it started earlier. it's my first time making them, but will post if the results are worthy.

so the bourbon- molasses short ribs came out excellent. i served it alongside some buttered egg noodles and sauteed jalapeno. i usually take a photo and attach with the recipe, but i don't have my camera right now. here's the recipe:
bourbon-molasses short ribs, serves 6-8
marinade- 1/2 cup bourbon 1/4 cup molasses 1/4 cup cider vinegar 1/2 cup water 1 tsp cayenne pepper 1/2 tsp salt 6-7lbs beef short ribs, separated into 3-4 slabs
sauce for bbq'ing- 2 tbsp unsalted butter 3 tbsp onion, chopped 1 cup ketchup 2 tbsp molasses 2 tbsp lemon juice 2 tbsp sugar 2 tbsp cider vinegar 1 tbsp worcestershire sauce 1 tsp dry mustard pepper to taste
combine marinade ingredients. trim excess fat from meat. marinade overnight.
for sauce, in a medium saucepan, melt butter over low heat, then saute onion until tender. add remaining sauce ingredients. bring to a boil. reduce heat to a simmer, cover, and cook 15mins. cool completely.
precook ribs and marinade in slowcooker on low for 5-6hrs or until tender. (ribs may also be precooked on the grill by wrapping ribs in foil and cooking over medium, indirect heat for approx 2hrs or covered and baked in a 350 oven for 1/5-2hrs till tender). once ribs are tender, brush ribs with bbq sauce and finish by grilling over medium heat for 20min, basting with bbq sauce frequently.
... we actually, accidentally, skipped the last finishing step on the grill and the recipe still came out very good.
