1 lb. fresh string beans (stems removed) steamed until just al dente
1/4 - 1/2 lb. Pancetta, cooked until not just crispy
1/4 cup Itallian Bread crumbs
some diced garlic
some diced onion
Olive oil
1 tbsp. butter
Fresh Grated Parmesian Cheese or Romano

I love pancetta, diced, with steamed green beans & onion, then sauted in garlic & olive oil...
served with a little itallian bread crumbs sauted with a tbsp. of butter until just browned, sprinkled on top...
top all with fresh grated Parmesian or Romano Cheese...
I could eat it alone for dinner!

Sounds yummy I will definately try that. For something really simple and tastey try this. Melt butter with some honey add crushed cashews and saute....toss with fresh cooked green beans. A big hit.

Just an FYI...
I dice the Pancetta in about 1/4-1/3 inch cubes before cooking for this recipe... don't discard or cut off the fat, just cook it, it makes the dish!
