Our second dinner at The Palms this trip. I had the Drunken Ribs with Garlic Mashed Potatoes with the mushroom gravy on the side. Just as good as ever. My wife had Jerk Chicken Kabobs with pineapple salsa and a side salad with delicious balsamic dressing. For dessert I had the Hot Chocolate Brownie with Vanilla Ice Cream. We sat outside on the patio and after dinner we had a unexpected visitor from the street. Only in St Maarten
Looks good, again. I know many love their ribs, but I am not a spare rib fan as I prefer baby back and for the price, it is a filet for me. I am going to miss your reports.
Carol we've seen lots of hens and their offspring along Airport Rd this trip. Coming back from P'Burg at the traffic circle by Carrefour there had to be at least 25 goats along the edge which begs the question where the heck did they come from. That's a very urban area. But the best sighting of wildlife was on the way up A J C Brouwer Rd on the way up to the observation area. On the cliff side of the guard rail I thought I was seeing a cow but when I I got closer it was a huge furry black pig. It was big enough to put a saddle on. I wish I would have gotten a picture.
We have often seen goats on the French side, by the side of the road. But that would certainly be a first for me, a pig on that road!! Yes, for sure, would have been a great pic!
Those chickens remind me of the time we landed in Tortola. Chickens all over the runway. Also when my wife had to go to the hospital in Tortola there were chickens running all along the hallway. Must be an Island thing.
I would state I am not a spare rib fan as much as a baby back fan and typically I prefer not sauced, but Greg nails it with his. Lots of time and effort goes into them and they are not inexpensive, I do not have an issue with the price. That said, I do prefer his filet and also the spicy lasagna. I will add that when he has his burger that he grinds himself along with his home made bun, dive in. Simple, top ingredients, one of my favorites on island.
Lots of talk about ownership, staff, tips and such. Greg and Jo have maintained the same staff for several years, at least in the front of house. That says a lot about a restaurant and the relationship between ownership and staff, really good people. They have built a great reputation and loyal following with their success formula. I have really enjoyed watching them build what they have over the last 10 plus years.
