We made this for Thanksgiving and it was a very good addition to the table! I think it will be a permanent addition! Thanks! I might think about preparing it in a mold or something next time, to fancy it up.

So glad you liked this -it is also great on turkey sandwiches. I am not sure it has the right gelatin ratio to mold, but is certainly worth a try. We always put it in a pretty cut glass dish.

So, you think it would mold better if there was more gelatin?

i ended up making georgia's green bean casserole, dharma's potatoes, banana chocolate chip bread, roasted brussel sprouts, jalapeno cornbread, autumn apple cake, and a couple of refreshing cocktails. i will try to get recipes and photos posted later this week. dharma's potatoes were ridiculously delicious... must be all that butter.

Wow! Can't wait to see pictures! I'm going to try some new ones for Christmas- especially that apple cake!
Glad the potato filling came out well! I only used 1 1/2 sticks of butter in mine but I think 2 is probably the minimum for that absurdly luxurious flavor! They were good but lacked that "omg!" factor.
If I can't be a good example, I'll just have to be a horrible warning.

I do. I think I would add a packet of plain gelatin or maybe just 1/2 packet.

My very similar recipe calls for a large pkg of strawberry jello, 1 Cup boiling water, 1 can whole cranberry (which has thickener in it as well), 1 can mandarin oranges, 1 15 oz can crushed pineapple and 1/3 to 1/2 cup chopped nuts (peacans or walnuts work well). I always drain both the mandarin oranges and the crushed pinapple and reserve their comingled juices, then I add about half the saved amount of liquid to the mixture. Spoon everything in to a 6 cup mold that has been sprayed with pam and let set overnight. I never had any problem with it setting up or holding its shape during a meal. It is a must at any turkey meal and very refreshing.

Carol_Hill said: So, you think it would mold better if there was more gelatin? It should be two small packages of Jello or one large package of Jello, not one small. [color:"blue"] Chunky Sweet Cranberry Relish with Jello[/color] Preparation Time:10 min Cooking Time:15 min Ingredients 2 small packages raspberry jello 1 cup sugar (I usually reduce to 1/2 cup) 1 cup boiling water 2 cups cranberries, chopped fine 2 cups chopped apples, peeled & chopped fine (I like Granny Smith) 2 or 3 stalks of celery, chopped fine 1 can crushed pineapple, drained 1 1/2 tablespoons chopped walnuts Instructions 1.Dissolve jello and sugar in boiling water. 2.Chop cranberries, apples, celery and walnuts in food processor - I usually do this about a cup at a time in my mini chopper - chop pretty fine. 3.Add the fruits and veggies to the jello. Chill. You can put this in a festive mold, if desired.

That looks pretty good also! What size can of pineapple, the small one or the large one?

ina's jalapeno cheddar cornbread recipe http://www.foodnetwork.com/recipes/ina-garten/jalapeno-cheddar-cornbread-recipe/index.htmli usually make these as muffins, but time limiting i threw it into a 9x13 casserole. smashed cauliflower http://allrecipes.com/recipe/smashed-cauliflower/detail.aspxsome reviews said that it was like soup... i should've heeded the reviews. i actually strained this with cheesecloth. taste was still very good. banana bread w/ chocolate chips http://allrecipes.com/recipe/chocolate-chip-banana-bread-ii/detail.aspxgeorgia's green bean casserole not sure if i used the wrong casserole size... it was good, but for the 8x8 surface area on top, too much cheese for my tastes. dharma's potato filling pre-baking this was a big hit. this will be part of my thanksgiving tradition. i kept it chunky, but may dice celery and bread smaller next time. LOVED this recipe. thanks again. i also made the autumn apple cake again. not sure what i did different, but this time it did not come out very well... it was pale and taste off. it may have been the gin cocktail that p made me... he makes a stiff drink. homemade vanilla ice cream was also made; it went so fast that i forgot to photo it. sorry.

Actually my recipe calls for one small package of jello. It is meant to be a relish not a molded or congealed salad.

L, the green bean casserole works better in a 9X13 pan...I should have specified that. Still, your picture looks perfect; I recognized it immediately!

what's funny is that as i was making it, i had a feeling it should be a bigger casserole size since the bean and cheese layer were pretty proportionate. but my rule with a recipe is to make it as is the first time, tweek next time. now i know. can't wait to do this all over again next year!
