well after the successful first attempt, i made fish for dinner the other night. this time i used a recipe from rick bayless's mexican everyday, snapper with zucchini and toasty garlic mojo. this is a great cookbook and the recipe did not dissappoint. i searched for the recipe online and found someone had posted it on their food blog. i've also attached a photo of my dinner. BIG thumbs up for this recipe.

this looks awesome...am i missing something here--is the recipe listed? i only see the photo and review, no recipe?

I agree with you - an excellent cookbook. We spent our vacation this year in Cabo and I fell in love with "real" Mexican food. Mind you, I used to live in Texas, so I also love Tex-Mex - but there was something so fresh and flavorful about the cuisine there.

I came back from that trip, started researching Mexican cookbooks and settled on that one too. Love how easy it is to cook from it!

Thanks for posting that recipe - I'll have to make it!

i've only made a few recipes from mexican everyday, but the ones i've made have yielded great results. i'll get around to more of his recipes eventually; problem is i have too many cookbooks and not enough time.
