We used to go in February, but found the water a bit cool for our liking. We've gone in several different months, but have found that we enjoy June the most. Little traffic, lovely water temperature, less crowds, no need for dinner reservations in most places. Yes, it is nice to get away during the winter weather at home, but we just found so many positives in our June trips, that it has become our favorite time.
