No, I thought the same thing. It is going to end up a big mushy mess. But, no they are crispy deliciousness. Hard to believe but true. The olive oil just enhances the flavor, plus it is good for you. Give it a try. The only bad thing for you in this recipe is the actual saltine cracker. Olive oil and spices are all heart healthy. My gastro Dr. said capsation (sp) in the hot peppers are good for your stomach. (who knew)!!! Enjoy Jo
