I have had the most unbelievably good results with this recipe from Emeril- everyone who's tried it just went crazy over it. We used Halibut but I'd imagine any nice, really fresh fish would be fabulous. http://www.foodnetwork.com/recipes/emeril-lagasse/english-fish-n-chips-recipe/index.htmlI'm sure others will have great recipes too...
