I think Bitter End to Anegada and back to Leverick is a good idea -- Anegada tends to get more packed on Tuesdays since that is the typical route of most charters. Better chance of a quieter day there on a Monday. Otherwise, your plan looks pretty good. What are your dates? Beans does wrap in early May for the season.
